Yes, and they're going to be a healthy, protein-packed breakfast your kids will love! Sneaking in a power breakfast or a nutritious protein-filled snack has never been easier!
My life revolves around my kids, nutritious food they will actually eat, and preparing convenient recipes they will love to take in their lunchbox.
If you're wondering how I manage to make “eggs” convenient, I want you to meet my friend Mrs. Muffin Pan. I measure and mix the ingredients in five minutes or less and she takes the heat and does the rest of the work for me!
Our relationship is too good to be true. Almost.
Every Sunday, I make a couple of dozen breakfast cupcakes for lunch-box go-to's and last minute, on-the-go snacks.
No, I am not overly ambitious or über organized, but I know how to take shortcuts that will make my mornings easier!
For these healthy on-the-go snacks or breakfasts, all I have to do is mix up the ingredients and we have a fun variety of cupcakes for in-the-car breakfast, lunches, afternoon snack, and post-workout grab-and-go. The added bonus is that you can sneak in some veggies and your kids still think they are eating cupcakes!
Breakfast Cupcakes

Yield: 1 dozen regular cupcakes
Ingredients:
- 9 eggs
- 5 Tbsp. milk
- 1 cup shredded cheese
- 1 cup diced ham, crumbled bacon, turkey, or
- 1/2 cup diced veggies of choice (or add ½ cup of another topping)
- 3/4 cup Bisquick mix
Directions:
- Pre-heat oven to 350F. Grease muffin pan (or spray, or line w/ liners).
- In a mixing bowl, beat eggs, milk, and Bisquick mix. Then add cheese and toppings and mix well.
- Spoon into muffin cups.
- Bake for 10-15 minutes until tops are golden brown.
- Allow for time to cool.
Easy and delicious!
Another reason to love these breakfast cupcakes? You can make a few dozen at a time and freeze them! My kids or I can zap a frozen breakfast cupcake in the microwave for 30 seconds and I have an instant snack!
