Eat Well: Seasonal Eating

I am currently studying to be a holistic health coach. I am about a quarter of the way through my year-long education and have learned about so many different dietary theories, it could make your head spin! What I find most exciting is discovering what all of these different diets, fads and lifestyles have in common. The most common of them are: eat your veggies, don't eat too many processed foods and, my favorite, eat seasonally. 

The days are getting colder here in Northeast Ohio and I no longer want a cold smoothie for breakfast or a chilled salad for lunch. I want something that warms me from the inside out. Not coincidentally, fall brings on the flavors that just beg to be heated up! Squashes and pumpkins, cinnamon, apples, root vegetables, cabbage and dark leafy greens are on the menu nowadays. Some of my favorite recipes for keeping my body in tune with the current season are below.

Quinoa Porridge
Rice Pudding
I like to add chopped apples to all of these.

Lunch and Dinner
Squash Soup
Roasted Beet
Sauteed Greens
Root Vegetable Stew
Baked Potatoes (and sweet potatoes!)
Sauteed Cabbage

You can add any protein to all of these dishes. You can make them a side dish or part of the main course. You can even substitute different vegetables within the recipes. Be creative and enjoy the amazing flavors of the season!
